Our Shoyu Caramel has long been a quiet favourite in our kitchen — used across our in-house dishes for its balance of richness, bitterness, and umami. Loved, asked for, and now finally made to go by popular request.

Slow-reduced with brown sugar and gula melaka, finished with shoyu to keep the sweetness in check. Glossy, bittersweet, and deeply savoury, it moves effortlessly between dessert and savoury — from ice cream and pancakes to roasted fruit, pork, or sauces that need restraint.
