Izumibashi Junmai Daiginjo Rakufumai 35% Kimoto
Izumibashi is the only brewery who uses Rakufumai, a rice varietal cultivated in Ebina city, Kanagawa. This premium sake offers great clarity and a complex umami profile, which can only be developed through the ancient Kimoto brewing technique. Using the traditional fune, the extraction is delicate and gentle & this sake is bottled only with the premium nakadori portion of the press.
