Toriyama Umami Wagyu from Gunma, bred with the precision of measuring umami. Chef Petrina has visited the farm and worked with Toriyama family in the past few years traveling and cooking globally with Toriyama Wagyu. A4 in grade, the favored cut used is the Chuck Roll (Zabuton). Served with sorrel pesto made in the likeness of chimmichurri, together with the briney caper oil and confit kipler potato makes it all complete.
