Sustainable Mottainai Lamb from Western Australia, fed on olives and carrots. Mottainai Lamb Knuckle is braised and further charred like char siew, glazed with our homemade Vadouvan paste. Served with celeriac polenta, fermented celeriac, vadouvan vinaigrette and curry lemon oil. Topped with garlic chips and chives.
