2017 Chateau De Béru, Chablis, Côte aux Prêtres
ORIGIN: Burgundy, France
Special notes: Natural wine, no sulphites
Athénaïs de Béru embodies an estate, a family, and four centuries of history. A history marked by forward thinking and innovation. Take her father, who in the 1980s decided to replant their entire historic estate, including the famous Clos Béru. A bold decision indeed, for the family had last grubbed up the vineyard after the phylloxera crisis – and hadn’t replanted since!
A Chardonnay from a single parcel of vines planted in the 1980s on soils of limestone scree across a hillside facing the rising sun, at an altitude of 300 metres. In terms of viticulture, the estate is farmed organically and biodynamically, and grapes are harvested with small 12 kg crates. The vinification process involves slow pressing, and a twofold maturation: 10% in barrels for 18 months and 90% in vats, followed by blending and 6 months in vats.
