Toriyama Umami Wagyu from Gunma, bred with the precision of measuring umami. Chef Petrina has visited the farm and worked with Toriyama family in the past few years traveling and cooking globally with Toriyama Wagyu. A4 in grade, the favored cut used is the Chuck Roll (Zabuton). Marinated in homemade shio koji, finished on the grill and served with grilled endives, celtuce jjangaji, and spring onion pesto.
