Toriyama Umami Wagyu from Gunma, bred with the precision of measuring umami. Chef Petrina has visited the farm and worked with Toriyama family in the past few years traveling and cooking globally with Toriyama Wagyu. A4 in grade, the favored cut used is the Chuck Roll (Zabuton), it is further aged and cured in miso to intensify it's flavor. Simply put on the grilled and cooked to medium rare. It is served with cherry kimchi, marinated spinach, soba okonomiyaki, and a special jus made with Sarsaparilla, and chinese herbs such as danggui, dangshen and more for wellness.
