Toriyama Umami Wagyu from Gunma, bred with the precision of measuring umami. Chef Petrina has visited the farm and worked with Toriyama family in the past few years traveling and cooking globally with Toriyama Wagyu. A4 in grade, the favored cut used is the Chuck Roll (Zabuton), it is further aged and cured in miso to intensify it's flavor. Simply put on the grilled and cooked to medium rare. 
This season, we are serving it with yucca garlic mash, black garlic bagna cauda sauce, szechuan mushroom and fermented thai eggplant
